Our history is witness to the splendor of Biryani and the regale associated with it. So, it’s no news when biryani, and many of its varieties, is called one of the beloved dishes of India.
Biryani is made by slow cooking the delicious combination of flavorful rice and marinated meats in a sealed degh. It is an integral part of Indian culture and is sought after by locals and tourists alike.
For starters, each city has its own version of biryani as they follow different cooking processes. Different methods work with a different blend where a few tweaks are added here and there. These delightful variations produce a distinctive and unique end product to each city’s culture and tastes.
We have some of the most popular biryani in India named Nizami, Hyderabadi, Lucknowi, Ambhur, Mughlai, Bombayi etc. that are made solely as unique dishes in different parts of the country. Each flavor offers a palatable taste, filled with richness of ghee, spices, different vegetables and meat.
Historically, the authentic biryani was gifted to Indians by Turks, Afghans, Arabs and Persians as a savory dish for providing a nourishing meal to the Mughal soldiers.
The story goes like this: Mumtaz Mahal, the chief consort of Emperor Shah Jahan, visited the army barracks and noticed the malnourished state of her royal soldiers. She was appalled at their conditions and hence, to address the underlying issue, ordered her cooks to prepare a healthy dish of succulent meats and rice to daily provide them with a nutritious and balanced diet.
This little act of compassion gave birth to the most sought-after delectable biryani and soon other versions followed due to its immense popularity.
The famous historian, Lizzie Collingham, is said to view the modern biryani as a mixture of Persian pilaf (a dish where the meat and vegetables are fried along with rice and cooked together in measured quantities) and authentic Indian spices and herbs.
On the contrary, there are other views where it is stated that biryani originated in South India and borrowed inspiration from Arab traders to enhance its flavors.
The popular Dum Biryani is one such delicacy that is bound to relish your taste buds with its spices and flavourful meat. The meat is marinated in a mixture of whole curd, turmeric, chilli, nutmeg, and cinnamon powder for the spices to incorporate fully and is layered with steamed rice. It is then cooked (put on dum) on low heat for a rich and textured flavour. That’s how the Biryani magic is created which has enamored all the foodies and food enthusiasts!
